Fié Gris, an ancient, pink-skinned mutation of Sauvignon Blanc, combines all the mineral zestiness of a young Sancerre or Pouilly-Fumé with the body and texture of a rounder wine, with aromas of wildflowers, tarragon, tomatillo, and white peach. On the palate, notes of pear and citrus come forward, backed by a touch of smoke on the finish. This wine is tremendously satisfying on its own as an aperitif or as a partner for seafood, goat cheese, and vegetables.

Domaine Jacky Preys et Fils

In the village of Meusnes, in the heart of Touraine, Jacky Preys and his son Pascal tend 80 hectares of vines — Pinot Noir, Gamay, Malbec, Sauvignon Blanc, and Chardonnay among them. But the family's true legacy is Fié Gris, an ancient, nearly extinct variety Jacky rediscovered in the 1980s: a patch of pink-skinned grapes on old vines that turned out to be pre-phylloxera survivors, later identified as an ancient mutation of Sauvignon Blanc. Since then, he has worked to revive Fié Gris and restore its place as a native Loire treasure.

Though the Preys family runs one of the larger estates in Touraine, it's their devotion to native varieties that sets them apart. They farm sustainably, hand-harvest their oldest vines, and favor minimal-intervention winemaking — using indigenous yeasts and gravity flow, and aging their Fié Gris on fine lees in stainless steel.
