Sourced from two north-facing parcels sitting just beside Premier Cru Montmains, this village Chablis is fermented and aged entirely in tank, preserving its pure, terroir-driven character. The most immediately approachable of Piuze's village-level offerings, it delivers vibrant notes of mandarin, delicate citrus and stone fruit alongside hints of white flowers, all underpinned by a stony, saline minerality that speaks unmistakably of Chablis. The palate is at once smooth and energetic — bright acidity and a racy, mouth-watering finish making it as versatile at the table as it is pleasurable on its own.

Patrick Piuze

Patrick Piuze, a Montreal native, took the Burgundy by storm when he arrived over decade ago. He worked for Leflaive, Jean-Marc Brocard and Jean-Marie Guffens before starting his own label in 2008, and has very quickly come to be counted among the legendary names of the region. Patrick’s main intention is to make a real difference between "wine grower" and "winemaker". He doesn’t own any vineyard but has a strong influence as a counsellor for the wine growers. He established a trust building approach and a long-term partnership towards wine growers. This philosophy enables him to pick the best lots in Chablis, most of them of very old, prestige vineyards, including sites such as Les Preuses and Grenouilles. As for technique, he is a maverick. While 90% of Chablis is machine-harvested, he harvests everything by hand, a paramount factor in the quality of his wines. Val de Mer is Patrick Piuze’s second winery, co-owned with Moutard-Diligent.
