In southern France, Cinsault traditionally has been used as a blending grape, and is generally made into Rosé. Cinsault’s light body and moderate alcohol levels have been used to soften more powerful grape varieties like Syrah and Grenache for centuries. However, the varietal is rarely seen on its own in a red. Enter this silky, elegant wine from Yves Falmet. Filled with hints of raspberry and blueberry, the wine also has the rare combination of black pepper and garrigue spices, with very soft tannins, which make it exceedingly food-friendly. It is a perfect match for white meats, tuna, and salmon.

Domaine Terres Falmet

Yves Falmet’s family comes from the steep hillside vineyards of the Côtes de Bar in Champagne, so the craggy terrain — and the terroir — of the vineyards in Cebazan, within the Saint-Chinian appellation in the Languedoc-Roussillon region, felt like home. After purchasing 25 hectares in this harsh landscape back in 1996, he set to work recovering the area's abandoned vines and old farm buildings, anchoring himself in a simple philosophy: Good wine comes from good grapes. Yves farms using exclusively organic methods and certifies all of his wines as being produced without pesticides. He describes his work in the vineyard as  “rational ecology,” a form of tending the vines that goes beyond organics. “My work in the vineyard is based on daily reflections involving observation of the climate, plants and every detail that allows me to establish the requisite ‘diagnosis’ for the way I will intervene. My approach is pragmatic, responsible and above all anticipatory."
