This whiskey blends six-, seven- and eight-year-old straight ryes aged in charred new oak, built on Horton, a seventeenth-century New York heirloom rye that had all but disappeared until New York Distilling Company revived it from just ten seeds from Cornell University, farmed by Pedersen Farms in Seneca Falls. Blended with the distillery’s own organic Field Race rye, both grown in the Finger Lakes and distilled in Brooklyn, it is bottled at 92 proof (46% ABV). The nose is honeyed, with ripe apricot and peach leading into candied pineapple, caramelized mango and dark floral sugars. On the palate, that tropical sweetness is balanced by firm rye structure and carries into a smooth vanilla finish, moving well beyond rye’s familiar spice.
