This is a Chardonnay grown with real restraint, produced from biodynamically grown fruit grown on volcanic soil, fermented spontaneously with native yeasts and shaped by mostly neutral wood (just 15% new French oak against 85% neutral, with a stint in stainless and acacia too), so the oak stays a whisper rather than a statement. In the glass it shows crisp, apple-skin fruit and a chalky, wet-stone minerality. The palate is refreshing and light, more mineral and saline than tropical or buttery — a Chardonnay built for any table, equally at home alongside crab, roast chicken, poached salmon, or a creamy, rich cheese.
