This savory and elegant natural white wine is the result of an agricultural experiment by winemaker Saul Gil Berzal. On a small plot of mineral-rich soil, he’s taken grafts of his oldest vines  — some well over 100 years old — and planted them on different rootstocks to see which yields the best results for a given varietal. The resulting field blend from this vintage is filled with notes of fleshy white fruit, crushed pineapple, and wet stone. Dry and zesty, this is a great choice for shellfish or pasta dishes, especially oysters!  Organic, biodynamic, and sustainable.
