DoubleWood 12 Whisky was launched in 1993, using a process designed by Former Malt Master David C. Stewart in 1982, now commonly known as 'wood finishing'. The whisky first spends many years of maturation in traditional whisky casks, which mellows the maturating spirit and imparts warming layers of vanilla spiciness. A second maturation takes place in European Oak Sherry casks increasing complexity, while bringing fruity, honeyed depths to the resulting Single Malt. The whisky is then transferred to large oak vessels called 'tuns' for three to four months to allow the whiskies from individual casks to marry. The result is a 12 single malt whisky that gains its distinctive character from being matured in two different wood types, with smooth and mellow notes of nutty sweetness, cinnamon spice, and a delicate layer of sherry. Try it neat, over ice, or in a hot toddy.
