A blend of Corvina, Rondinella, Croatina, and Molinara, the grapes are dried for three months in fruttaio (a grape-drying room) and then spontaneously fermented with indigenous yeasts in steel tanks for 25 days. It’s aged in Slavonian oak barrels for 30 months and then another 6 months in bottle. The result is a deep ruby red wine with elegant and complex aromas of dried fruit, jam, underbrush, walnut husk, and leather. On the palate the wine is balanced with a rich and delicate long-lasting finish. Open at least an hour before serving alongside braised meat, roasted duck, and aged cheese. Practicing organic.

In the heart of Valpolicella Classica, Nicolis is a family-run powerhouse crafting soulful reds from one of Italy’s most iconic terroirs. Since 1951, when Angelo and Natalia turned their family’s humble production into a full-fledged winery, three generations have been shaping Valpolicella history—without ever losing sight of tradition. Today, brothers Giancarlo and Giuseppe (with Giuseppe’s son Angelo stepping in as the next-gen enologist) manage 49 hectares of vineyards in San Pietro in Cariano and the surrounding hills, all farmed with a deep respect for the land. At Nicolis, nothing artificial makes it into the wine—not in the vineyard, not in the cellar. No herbicides, no pesticides, no lab-grown yeast. Just old vines, native grapes, and Mother Nature doing her thing. The result? Some of Valpolicella’s purest, most soulful bottles around.
