
Description
This crisp, textured white hails from the famous village of Chavignol, just outside of the town of Sancerre. Produced from organically farmed Sauvignon Blanc by Pierre Martin, whose family has tended vines in this area for centuries, the wine is bright and elegant, with notes of green apple, Asian pear, citrus zest, fresh herbs and a long, mineral-driven finish. This is an excellent aperitif and a great partner for salads, seafood, and white meats.

Domaine Yves Martin
Domaine Yves Martin is a small, family-run estate based in the village of Chavignol. It’s 19 hectares — which grow on Kimmeridgian marl and stoney top soils in two of the most famous terroirs of Chavigonol — are managed by Pierre Martin, whose family has tended vines in this area for nearly 200 years. Indeed, Pierre took over for his father, Yves, in 2005. Today, the domaine is in in conversion to organic viticulture; they never use herbicides or pesticides. The winery is located in the center of the village and is gravity fed. All fermentation happens spontaneously in thermo-regulated tanks. Most of the wines are aged in stainless steel (although a couple of the cuvées are aged partially in barrels) and all are aged on the fine lees, lending a nice richness to the wines. The result is mineral-laden, refreshing Sancerre with citrusy lime notes and a lingering finish.
