Tremendously ageworthy, this Pinot Noir is named for a set of plots situated at the top of the hillside above Richebourg, in the Côte de Nuits. Just below it are Premier Cru sites of Cros Parantoux and Let Petits Monts. One part of the vineyard faces north, the other east, benefiting from exceptional ripening conditions. The thinness of the very calcareous sandy soil, the steep slope and the numerous rocky outcrops make it a perilous hillside to work. But, the wine is more than worth it. Pure and ethereal, with aromas of crushed white stone, blackcurrant, candied plum, ripe cherry, spice, white pepper and woodsy herbs, this wine  is exceptional alongside Brebirousse d’Argental, and a host of other cheeses, as well as roast duck, poultry, and red meats. 

Domaine du Couvent

Located in the heart of Burgundy’s Côte du Nuits, Domaine du Couvent is a 10.5-hectare estate managed by Philippe Chéron with his sons, Paul and Hugo. The domaine name evokes the quiet sanctity of the 12th-century Gevrey convent whose monks tended the ‘Clos du Couvent’, one of three monopoles under the watchful care of the Chérons. Equally guarded within a repository of diverse grands terroirs are four Premier crus, Gevrey La Romanée Monopole, Gevrey Champonnet, Chambolle Feusselotes, and Nuits Aux Murgers; plus two Grand crus, consisting of two exceptionally well-situated hectares in Le Clos Vougeot and a near-.4-hectare plot in Charmes-Chambertin Aux Mazoyères, no less. The estate produces 15 wines, the story of a family passion for wine, exceptional heritage and a deep commitment to sustainable and vibrant viticulture.
