This is an unbelievably unique, gastronomic wine. It has the vivacity of a crisp white wine, but is amber in color, and filled with tropical fruit and cocoa dusted hazelnuts. Insanely aromatic, the wine is made from biodynamically farmed Palomino that has been fermented and aged for 12 months in ancient Oloroso sherry barrels. Succulent and poised, it's a great option for pork and rice dishes, as well as firm cheeses.

Alejandro Naváerez y Rocío Áspera are natives of El Puerto de Santa Maria, old classmates who became friends turned lovers turned business partners and dreamcatchers. Rocío is native to El Puerto de Santa Maria and Alejandro, half Spanish by way of Málaga/half French by way of his mother, can’t recall a childhood meal in which wine was not the centerpiece of great discussion.
