Carignan, Syrah, Grenache Gris, Valdiguié and Trousseau Noir are picked early to keep their acidity bright. Each one is fermented on its own with native yeast in steel, concrete and neutral French oak, then blended. In the glass you’ll find dried cranberry, warm baking spice and a hint of cocoa. The acidity is lively and there’s a bit more depth than in earlier vintages, but it stays light on its feet.
