Produced from 100% Cinsault, the grapes are crushed with a traditional Zaranda, or press, which allows for partial carbonic maceration during the fermentation process. After four days the grapes are pressed and the wine, still fermenting, is racked into a stainless steel tank where it completes fermentation. La Vispera is Juan's interpretation of a "nouveau" style of wine, medium-bodied, fresh, juicy, with notes of wild strawberry and black raspberry, ideal for a cool, spooky fall evening.
