Persati, in the Imereti region of Georgia, is the ancient home of the Tsolikouri varietal used to make this natural, orange wine from the Tarasi Minadze winery. Made from hand-harvested, organically grown grapes, 10% of the grape sees about 10 days of skin contact, and the rest is all direct press followed by fermentation using ambient yeasts. The finished wine ages for 8 months in qvevri, large earthenware vessels used for the fermentation, storage and aging of wine in Georgia. In the glass, the wine is amber-colored and fresh, with notes of quince, stone fruit, savory aromas, and a lightly tannic grip. This easy-drinking orange is a great match for chicken salad and vegetable dishes.

Tarasi Minadze

Irakli Minadze and his brother, Tornike, head a small estate they call "Persvi" in the village Persati of Baghdati District in the Imereti region of Georgia. They follow in the footsteps of their grandfather, Taras Minadze, who persevered in his passion for viticulture through the political challenges of the last century. The Minadze brothers approach their craft with regional ancient traditions of winemaking in mind. Grapes are organically grown and hand-harvested. Irakli relies on indigenous yeasts, and uses no fining, no filtration, and no sulfites at any stage, including bottling.
