'Xila" means woman in the language of the indigenous Zapotec people. It's a fitting name for this aperitif made from mezcal by Flor de Luna Distillery, the first woman-owned and woman-run microdistillery in Mexico City. Created by Hillhamn Salome in 2015, Xila is inspired by the rich cultural and culinary history of Mexico. Seven notes make up the unique flavor profile — caramelized pineapple, lavender, chile ancho, hibiscus flower, clove, cinnamon, and black pepper, infusing the finished liqueur with a smoky, spicy sweetness that is perfect for cocktails.
